Jeff

Welcome back Jeff! Our traditional Hefeweizen has returned! Some might think that traditional means boring, but to us this beer is anything but boring. It’s a complex beer for being such a simple grain bill. Half Pilsner malt and half malted white wheat with a touch of acidified malt make for a soft and pillowy beer. The yeast does the talking here, Jasper Yeast Labs sent us a lovely Hefe yeast that gives us subtle clove and banana flavors with other ester notes that make this beer a perfect choice for spring and early summer! Look out for this beer again later this year with strawberry puree! Prost!

Feather Weight

Our first attempt at making ultra low alcohol beers for the teetotaling folks out there, or maybe you just want to enjoy more beers with your friends without the hangover. Either way, this is the beer for you. Brewed to counteract thin body and dosed with comparable levels of hops to mimic a pale ale at higher alcohol percentages. Changes will be made, but overall we call the beer a success in flavor and body for such low alcohol. Mosaic hops make for a delicious flavor, and we dry hopped it!

Paddy Wampus

Dry Irish stout is the style for this beer. Some of you might be familiar with the widely distributed dark beer that begins with G that this style is known for. Imagine that but with more flavor and freshness packed in. Slightly more roasty with a hint of dark molasses than a typical Irish dry stout. To pack a little more texture and awesomeness into the beer we are pouring it thru a sidepull faucet to give a foamy head reminiscent of a nitro pushed beer. Sláinte!

Fractal

A recently redesigned IPA that focuses on big hitter hops. A traditional west coast IPA this beer is made with only pilsner malt, a touch of flaked wheat for head retention and acidified malt to correct mash pH. Light in color, but big in hop flavor featuring Mosaic, Citra, and Columbus in the kettle for a citrusy, piney, and slightly dank hop bomb. Then, dry hopped with Mosaic and Idaho 7. If you like west coast IPAs, this is a classic example of the style.

Lazlo

Darker, slightly roasty notes from the addition of roasted and crystallized rye grain are combined with a hop profile that would usually be found in a german pils, making this beer a style all its own. Hops for this are all Hallertau Mittlefrüh, combined with the slight roast gives this beer a drying finish and an easily drinkable quality.

Beer With No Name

The first in a series of experimental IPAs using largely unknown hop styles. The first on the list is Ariana. Developed by the Hop Research Center in Hül, Germany. This hop has a wide flavor profile that ranges from blackcurrant and grapefruit to geranium and vanilla with an aroma profile that includes berry, citrus, and tobacco.

Bindle Brown

This robust American brown ale is the perfect companion for the season. With a harmonious balance of roasty malts and subtle bitterness, it’s rich yet approachable. Each sip reveals deep coffee notes intertwined with a touch of caramel sweetness, all leading to a dry, slightly nutty finish that keeps you coming back for more.

Rubus

One of our recurring favorite beers, Rubus, is a heavily fruited raspberry beer that’s been kettle soured. We added a touch of coriander in the boil to add to complexity, and give it the slight citrus bump it needs to compliment its sourness. Light, bright, and tasty, Rubus is the beer for people who think they don’t like beer.

Pils R GÜD

An Italian style pilsner with a delicate malt character and a refreshingly crisp finish. A staff favorite! Most Italian pilsners are dry hopped. Ours isn’t. Dry hopping is great and all, but heavy kettle additions give a more refined and pleasant hop flavor/aroma that isn’t garnered by dry hopping (especially with “noble hops''). 100% Hallertau Mittlefrüh hops with 100% Epiphany Modern Pilsner malt.

Rye Not

Using specialty malt from Simpson's, Crystal Red Rye, that has descriptions of toasted dark bread, autumnal sweetness, and rich malt, we made a delightful twist on the everyday pumpkin spice beer. The use of this crystal malt along with a few other dark malts made for a rich and flavorful backbone to support the spices added: ginger, cinnamon, nutmeg, and cloves. The spicing was intentionally left low to remind you that you're still drinking a beer, but with the taste of pumpkin spice that you crave in the fall months.
